Simplified Cooking with Bhuna Masala

Ingredients:-

Onion medium sized- 5 nos
Tomato medium sized-  10 nos
Green chillies - 3-4( Take more if you like spicy food and wanna reduce intake of red chilly powder)
Ginger - 2 inches
Oil - 2 tbsp
Cumin seeds- 1/2 tsp

Process:- 
Heat a pan and add oil.Add cumin seeds in hot oil and let them get roasted. In a grinder Make a paste of onions and add that in hot oil above and roast it till golden brown (water is evaporated).Again put ginger,green chillies and tomatoes in the grinder and blend them into a smooth paste.Add the tomato puree to the roasted onions and roast it for 20 mins (till no water is left) and a thick paste is formed.

This masala can be used in any gravy based curry .It can be stored in freezer and can be used over a period of  3-4 days(as it is fried in oil and water is dried). I will be providing the recipes in my "Everyday cooking for working women" series.

Spicy Baby Potatoes

Ingrediants:- 

Baby Potatoes - 20( cut each in 2-3 pieces)
Red Bell pepper-1
Yellow Bell Pepper- 1
Rosemary Herbs- To sprinkle
Cumin Seeds - 1 tsp
Cinnamon Stick- 2 inches
Black pepper- 8-10
Dried Red pepper- 2
Cloves- 2
Salt and Olive Oil

Process:-
Heat a pan add Cumin seeds,cinnamon,black pepper,cloves and red pepper.Dry Roast them and then grind to make a powder.
Place diced potatoes,red and yellow bell pepper in a microwavable plate.Sprinkle salt and powdered rosemary herbs,above roasted mixture and 2 tsps of olive oil.Preheat the microwave to 180C. Once preheated, place the plate in microwave for 20 mins at 180C.

Best served with cocktails,mocktails as a starter.
